As some of you may know my kitchen has been Closed for a about a week. Man have I been missing it too. Well it's back open this weekend but we've been having A/C issues which has kept the cooking down to a minimum. But I did manage to make Pizza bowls for us for dinner last night.

Pizza Bowls not taking or giving credit on these because they have been around for ages. It's a matter of what you like. Some call crust-less pizza some call them like I do pizza in a bowl. Whatever you call them they are yummy!
Ingredients:
- 1/3 cup pre cooked ground meat for each bowl other options would be pepperoni, sausage, ham, Canadian bacon ground pork, turkey or chicken. Heated.
- 1/4 cup pizza or spaghetti sauce for each bowl
- veggies of choice I used red peppers and zucchini
- cheese of choice cut into chunks with a few thin slices for top I use mozzarella
Preparations:
- Preheat oven to 475 iv you like your cheese crispy
- Prep 1-2 cup custard cups by spraying well with non stick spray. 1 per person
- Spread 1 tbsp. sauce on bottom of each cup.
- Top with meat I used precooked ground beef but whatever you like works.
- Add veggies and chunked cheese
- Stir to combine
- Top with slices of cheese
- Microwave til hot and cheese is melted or mostly melted
- Pop in hot oven for 5-10 minutes until cheese forms a crispy crust.
- Cool a few minutes and dig in.
Great served with a crisp salad and cauliflower bread sticks if you happen to have any. I didn't but I intend to next time.
I made my first pizza using Cleo's I can't believe it's Cauliflower Pizza tonight Thank you so much Jamie, it was awesome!!!! If you haven't check out her site yet, your really missing out. "For a good time, click Cleo"... She's a hoot and a half!
You Won't Believe it's Cauliflower Pizza Crust
Ingredients:
1 cup cooked,cauliflower*
1 egg
1 cup mozzarella cheese
1/2 tsp. each, basil, thyme, fennel seeds, salt, and oregano
Toppings:
I used
3 tbsp. hunts spaghetti sauce
sliced onions, green and red pepper, zucchini, pepperoni and pre-cooked ground meat from the freezer that I thawed and heated.
Preparations:
- Preheat oven to 450
- Cook cauliflower, I used the microwave. Drain and cool
- Chop mozzarella into chunks and throw in food processor. Pulse until all evenly shredded.
- Put cauliflower in food processor and pulse again until a dough starts to form.
- Add egg and spices and pulse again.
- Dump out on baking pan lined with silicone or parchment paper.
- Using your hands form into pizza crust. I made my into a rectangle
- Bake crust for 12-15 minutes
- Remove from oven and let cool a few minutes.
- Top with choice of toppings and pop back in the oven to heat and melt cheese.
- Cool a few minutes before cutting.
- This was so good, and I absolutely could not tell it was a cauliflower crust!
First off I want to start out by thanking Jamie of The Lighter Side of Low Carb for this crust recipe. I also have to admit I looked at the wrong recipe and only added 1 egg and 1 cup of cheese. I also didn't have mozzarella and used the fiesta blend I had pre-shredded. It tasted fantastic, but the crust really didn't get crunchy at all. Next time I will follow the recipe...giggle
BBQ Chicken Pizza
Preheat oven to 450
Ingredients:
- 1 large or 2 small zucchini, grated
- 2 eggs, beaten ( don't do like me use 2 eggs...giggle)
- 2 cups shredded cheese, Jamie called for mozzarella but the fiesta blend did just fine.
- salt, pepper and a little garlic powder
- 1-11/2 cup pre-cooked chicken, I used can for my first try because it's what I had.
- 3-4 tbsp. low carb BBQ sauce.
- veggies of choice, I used red pepper and onion
- cheese of your choice, I used provolone and more fiesta blend
Preparation:
- Shred zucchini sprinkle with a little salt and let set a few minutes.
- The squeeze out as much liquid as possible. Keep squeezing until you can't get any more liquid out.
- Mix in the eggs and cheese. I used my hands.
- Using your hands form into a crust on a baking pan covered with parchment paper or silicone mat.
- Bake until golden brown about 15 minutes.
- While baking prepare the rest of your toppings. I cut my onions super thin so they will cook when melting the cheese.
- When golden let cool a few minutes before topping.
- Heat the chicken up
- I didn't want to use enough BBQ sauce to use as the sauce on the pizza so I used a layer of cheese. You could use BBQ sauce if you have one low enough in carb.
- Place the rest of the toppings and top off with a little sprinkle of cheese. Don't go wild, you have lots of cheese already.
- Bake until cheese is melted and nice and gooey.
- Let it set up a few minutes before cutting and serving.
We're running low on groceries so I'm having to use what we have. Hopefully someone will get well enough to make a run to the grocery before too long. Then I can make Jamie's Taco Pizza Yummy!
