    Sausage Gravy

     I was so hungry for something spicy.  I couldn't think of what I wanted and then it hit me.  Sausage gravy.  I thought I would make it nice and thick and eat it in a bowl, instead of on toast.  Sounded good but how to make it without flour.  Carbquik seemed the likely answer, but I've never been able to make decent gravy.  So here I go into the kitchen.  I have my canister of Carbquik, a little butter, some sausage and Hood Countdown.  Just a hint if you try this DO NOT SALT.
     
    Not the creamy gravy you get from flour but no lumps and pretty good.  Next time I think I will melt a little cream cheese in the gravy before adding to the sausage to see if that will make it creamier.  And I ended up eating on a couple of oopsie rolls... yum!  So here's what I did and it work pretty darn well.
     
    1 tbsp butter
    1 tbsp. sausage drippings
    1/2 lb sausage
    2 tbsp Carbquik
    1/2 c Hood
    Black pepper NO SALT
     
    Brown sausage in a small skillet.  While it's browning melt butter in a small sauce pan and  let it brown just a tad ( slightly brown) pour in some of the sausage drippings in with the butter and whisk in the carbquik.   When it's well incorporated, add milk slowly whisking constantly.    When Gravy is still a little thin add to the sausage and stir.  Let it cook until thickened.  Serve hot over toasted Oopsies or scrambled eggs.

    Sausage Pasta

     If you know me at all you know how I love to go fridge diving.  You never know what you will find in there.  I'm also one of those people that saves little bits of things because they can be added to something else later. 
     
    So for lunch today I went fridge diving.  I came out with a bowl of Dreamfield Ziti, 1/2 package of Hillshire Farm smoked sausage ( fewer  carbs than the other brand *wink*) 1 small zucchini, a piece of onion and a Roma tomato.  So I set out to come up with a sausage pasta dish that turned out very good.  I would most certainly have added peppers and mushrooms had I had them, but it turned out quite good just as it was.
     
    Sausage Pasta
     
    Ingredients:
     
    • 1 serving Dreamfield Pasta or shirataki noodles
    • 1/2 package of smoked sausage or whatever kind you have
    • onion, sliced thin
    • 1 clove of garlic, crushed and minced fine
    • veggies of choice. I used zucchini but I wish I had had some red pepper too. Spinach would have been really good too.
    • 1 Roma tomato
    • 1 tbsp. butter
    • salt and pepper
    • red pepper flakes
    • Parmesan cheese

    Preparations:

    1. Melt butter in a pan and saute onions and garlic.
    2. add zucchini continue to saute
    3. add sausage and saute until it starts to brown
    4. Mix in pasta, tomato and seasonings.
    5. When everything is heated through and nicely cooked
    6. Sprinkle with Parmesan cheese and let set a few minutes to melt.
    7. Makes 2 servings
