    Lower-carb Party Mix

    This is not low carb by any means but it is lower in carbs than the traditional chex party mix. We've made my Nanny's "chicken feed" recipe for Christmas for as long as I can remember. I don't know when or why the name changed but we've always called it trash. Neither name is all that appetizing which is why I'm sure most folks call their versions Chex Party Mix.

    We've always made tons of this stuff because everyone loves it and no one in the family makes it as well as we do, or at least that's what they tell us. The trick is a good balance between red pepper flakes, garlic and Worcestershire sauce.

    But it's just too darn high in carbs to even indulge in a little here and there, but it's so much a part of our Christmas traditions. So this year we mom made 2-3 batches of the regular stuff for friends and family. I made this lower carb version for her and I so we can have a cupful here and there so we don't feel left out.

    Lower-carb Party Mix

    Ingredients:

    • 2 cups whole shelled pecans
    • 2 cups whole shelled walnuts
    • 1 cup mixed nuts
    • ½ cup cashews
    • 2 cups Fiber One
    • ½ stick butter
    • 2-3 tsp. Garlic powder
    • 2-3 tbsp. Worcestershire sauce
    • Red pepper flakes to taste (we like it spicey)

    Method:

    1. Preheat oven to 200
    2. Melt butter and spices in a small sauce pan
    3. Mix together nuts, cereal and popcorn in a large bowl
    4. Drizzle butter over nut mixture and stir to coat
    5. Spread out on a cookie sheets and bake for 25-30 minutes, stirring ever 10 minutes. Do not over brown!
    6. Let cool and store in an airtight container.
    7. Eat one cup at a time for a lower carb Christmas treat!

     

     

    Chili Lime Chips

    What's chili without chips right? These have the extra spicy kick of chili and the fresh clean flavor of lime, perfect to set off my Mellow Chicken Chili.

    Chili Lime Chips

    Ingredients:

    • ½ sheet of Joseph's lavash bread, fresh or stale doesn't matter
    • ¼ package True Lime
    • ¼ tsp. chili powder
    • Paper lunch sack
    • Salt
    • 1-2 tbsp. coconut oil

    Method:

    1. Cut lavash bread in half, then in half again. Save other half for another time. Stack the 2 pieces and cut in half again. Then cut diagonal triangles if you like.
    2. Mix salt, True Lime and chili powder in the lunch sack, don't use plastic it will melt from the hot grease.
    3. Heat coconut oil and fry Lavash bread pieces until golden brown on both sides.
    4. Move chips directly to the paper bag and shake.
    5. Remove to a bowl or basket to cool.

    I serving = 5 net carbs + 3 grams fiber

    My chili powder is 1 net carb for ¼ tsp. so check you label. Yours might be far less.

    Low Carb Orange Julius

    I have a brand new favorite snack. It's quick, rich and creamy and can easily stand as a meal replacement if you need it too.

    Low Carb Orange Julius

    • 1 cup Hood Calorie Down = 3 net carbs
    • 1/3 c heavy cream = 1 net carb
    • 1/3 c crushed ice = 0 net carbs
    • Tsp. vanilla = 1 net carb
    • 2 pkg. True Orange, or s/f orange syrup such as DaVinci's = 1.5 net carbs
    • 1 pkt. Splenda or equivalent = depends on what you use.

    Place ice in your favorite mug. Pour cream over ice and using a small whisk, quickly whisk to froth and chill the cream. Add the remaining ingredients and whisk again to mix and froth. Enjoy!

    You can of course easily change the flavor to your favorite. But I'm a huge fan of the vanilla/orange combo and the true orange is perfect for this. I picked mine up at Kroger's.

    For a quick meal, add a scoop of your favorite protein powder.

    Even without the protein powder the fat and protein in the cream keeps me going for a nice long time.

    Since a cup of heavy cream and a cup of hood have the same carb count, you can adjust the ratio to fit your taste without any change in carb count. So make it as rich and creamy as you like.

    As we all know keeping things on hand to snack on is a vital part of low carbing. If you can make portable snacks all the better and if my chance they are crisp or crunchy ... well then we low carbs are indeed a bunch of happy campers.  It was with this in mind, and an overwhelming desire  to snack on granola again that led me to this recipe.
     
    While I had a lightly sweet granola in mind it would be very easy to turn this into a savory snack as well. Simply replace the sweet stuff with something tangy, spicy or savory. I'm thinking grated cheese might just work.
     
    Well first things first.  Granola is all about natural flavors.  Nuts, seeds and oats being the main ingredients. And while I have made lower carbed granolas that relied on less oats, added fiber cereals and lots of nuts and seeds, the carb count is still awfully high.  So with that in mind I was trying to create something to add to the nuts that would be crunchy lightly sweet but wouldn't add the carb count of oats or cereals.  It took a while but then it came to me.  Simply make a cereal/cracker type replacement.  There are flax cereals on the market but I don't have the money to order that kind of thing.  So I thought.  What do you think goes into them.  Well flax for sure, and something liquid, maybe some cinnamon, some type of sweetener but what would make it crisp or crunch.  Well I have had crackers that I made with flax and almond meal and bake that were mostly crisp.  There is Cleochatra's microwave flax crackers that while good don't stay crisp after the cool.  But it was a place to start.

    So I gathered my supplies and I played around a bit.  A couple tbsp. of flax went into the bowl, well I had already decided I wanted cinnamon so I added a quite a bit of that.  You have to have a bit of salt so a few shakes went in the bowl.  It sure smelled good.  I dug around and found a bottle of DaVinci caramel syrup.  I haven't used it often and it was way way to the back.  Maybe I could us it as the liquid and sweetener. So I added and gave a stir.  Flax being as strong as it is I add 2 drops of sweetzfree as well.  I quickly mixed it all up and poured it into a zip sandwich bag.

    I preheated my toaster oven to 300 I didn't want to brown them more like dry it out.  I covered my toaster oven's baking pan with parchment paper sprayed with veg spray.  I wasn't sure what shape I might want but I new I wanted these small.  If they worked I wanted to mix up a batch of granola minus the cereals and then add these to it later.
     
    I squirted out little buttons and still had a bunch left.  Then I was thinking how nice it would be to have pretzel sticks.  So I piped out several long lines of the mixture.  So into the oven it went.  I would love to tell you how long it took to get a nice crunchy outside but I forgot to set the timer... But I'm pretty sure it was close to an hour.  Yes I know that's a long time, but good things some time take a while.

    When they came out they had only shrunk up just a little and were only slightly darker than going in.  I let them cool and then munched on them all not giving anyone else to give me feed back.  And of course I didn't manage to put any aside to find out if they would be crunchy tomorrow.  So at best this is a work in progress.  I thought after piping out all the shapes that a little coconut oil might make them a bit more crisp and I intend to try that next time.  But as they were they were a nice little hand full of crunchy goodness that was very low carb, easy to make although it did take a while. 
     
    Once I get this idea perfected I will make up the recipe to make more at one time.  Even with the "thickening" of the flax I think you could pipe out a lot more at one time.
     
    They left me with the feeling of having eaten one of those cinnamon crunch cereals.  I will also have to see if they would hold up to milk.  I might just have come up with the perfect cereal replacement.  But somehow I think they would get really soggy.
     
    I also think that if you added a few of your favorite spices, a little hot sauce and water mix that up with shredded cheese that it would be very crunch and might be a good replacement for snack crackers.  But I haven't had a chance to play with that idea yet.  Many more tests in my future I can tell.
