    Jalapeno Flax Bread

    I have long been searching for a way to replicate cornbread. Something I miss terrible at this time of the year. Since nothing has the same taste or texture as cornbread, I've decided that mimicking it is useless. I decided to try to create something with a similar flavor and spirit.

    Since I'm a complete nut when it comes to hot and spicy and corn if my favorite grain, it should come as no surprise that I absolutely love jalapeno cornbread.

    My first try at this I was actually trying to recreate the flavor however, 3 tbsp of cornmeal has 19 net carbs and doesn't add much flavor. What I decided on was just using the jalapeno, onion and cheese from my original cornbread recipe and add it to Laura's flaxseed recipe, which in my opinion has a texture slightly similar to cornbread. The results are not cornbread of course, but a very flavorful, spicy bread perfect to accompany a big bowl of soup or chili.

    I also found that it makes an excellent toasted ham sandwich to go with a bowl of veggie soup.

    Jalapeno Flax Bread

    Ingredients:

    • 2 cups of flax meal
    • 1 tbsp. baking powder
    • 1 tsp. salt
    • 2 cups shredded cheese (I used Mexican blend)
    • 5 eggs
    • ½ cup oil (I use coconut oil)
    • ¼ a med. onion, chopped
    • Jalapeno pepper slices, depends on your preference
    • ¼ cup milk (I used hood calorie count down)

    Method:

    1. Preheat oven to 350
    2. Measure dry ingredients into a medium bowl and whisk to combine.
    3. Place onion and jalapeno slices in food processor (I use my mini chopper) and pulse until finely chopped and slightly liquid.
    4. Beat wet ingredients until well-blended and no eggy tales are left. Stir in onion and peppers.
    5. Mix wet and dry ingredients and pour into a really well greased pan or very hot cast iron skillet.
    6. Bake for 45 minutes or until brown and crunchy on top and cooked through
    7. Cool completely
    8. Store in zippy bag or in the freezer

    This has such a good flavor, I'll be trying other savory recipes in the future. My favorite way to enjoy this is to split into, butter and toast until crunchy and the butter melts. Add a bowl of cabbage and I'm a very happy girl!
